Mom's Cornbread
This is my Mom's basic recipe for cornbread. I received it as a wheat-free recipe. Other variants are possible.

Ingredients
- 1 cup cornmeal
- 2 eggs
- 1/2 cup vegetable oil or meat drippings
- 3/4 cup milk - fresh or sour
- 2 tsp baking powder for fresh milk, or 1 tsp baking soda if using sour milk
Optional Ingredients for variations:
- Bacon pieces
- Chili peppers
- 1/2 cup grated cheese
- Chili powder
- Onions
- Garlic
- Chopped nuts
- Water chili peppers were boiled in for Chili Sauce mixed with powdered milk to reconstitute 3/4 cup milk
Preparation
Preheat oven to 350 F,
- Grease 9x9" square or 14" round baking pan
- Stir together all ingredients until moistened
- Pour in pan
Cooking
- Bake 20-25 minutes until golden brown
Yield: 6 servings as side dish
Serving
- Cut into squares
- Serve warm
Leftovers may be saved and used as breadcrumbs for frying or for Meat or fish loaf or in your favorite recipe for wheat-free bread crumbs.
