Flax Burgers
This recipe is adapted from the recipe for "Scottish
Cheesburgers" in
Healthy & Hearty Diabetic Cooking The Cookbook of the
Canadian Diabetes Association, 1993 edition, pg 155. The
adaptation I have made is substituting ground flax for the
rolled oats.

Ingredients
- 1 lb lean ground beef or ground
turkey
- 1 egg, beaten
- 1/4 cup ground flax (the original
recipe called for rolled oats)
- 1/2 tsp salt (optional)
- 1/4 tsp black pepper
- 1/4 cup minced onion (I use
more)
- 1/2 cup Swiss cheese,
grated
- 1/2 tsp tarragon, dried and
minced
- 1/2 tsp Worcestershire
sauce
Preparation
- Mix all ingredients except cheese. Do
not overmix.
- Divide into 8 portions and
flatten.
- On 4 of these, add approximately 1/8
cup of cheese. Top with one of the other 4 patties, and
pinch edges together.
Cooking
- Broil, grill, or barbecue burgers a
few minutes to desired doneness, turning
once.
Yield: 4 servings
Serving
- When done, put on place. These may be
served on hamburger buns, bread, or may be eaten with
forks.
