Homemade Vanilla Extract
Vanilla beans are much less expensive than commercial vanilla extract. Moreover, a difference in the type of alcohol used vastly changes the taste. Try this using vodka, rum, bourbon, or Canadian whiskey.

Ingredients
- 20 oz 80 proof alcohol
- 4 whole vanilla beans
- 12 oz water
Preparation
- Heat water to boiling, and cool down to room temperature
- Stem and split the vanilla beans
- Place vanilla beans in quart mason jar
- Pour alcohol over beans
- Pour in enough water to fill jar
- Tightly cap jar
- Shake

Variation
Substitute 1 vanilla bean with 1 tbs whole coffee beans, for a coffee-vanilla flavoring.
Steeping
- Place in dark place
- Shake the jar weekly
After 3 months, remove beans, discard, or place in powdered sugar for vanilla sugar
- Strain through cheesecloth to remove any solid debris, if you wish
Yield: 1 quart vanilla extract
Serving
- Use like any other vanilla extract
